Chocolate Peanut Butter Oatmeal Energy Bites

These Chocolate Peanut Butter Oatmeal Energy Bites taste amazing and happen to also be the perfect little afternoon energy boost. The oatmeal and honey are really just your base, and you can mix up pretty much anything that sounds good to you from there. For instance, my kids are obsessed with Nutella. So I could sub that for the peanut butter, and use some white chocolate chips to mix it up, or even throw in some slivered almonds if that’s your thing! I added Rice Krispies for a little extra crunch, but you could add pretty much any cereal as well. Obviously the fun little sprinkles are optional, but I can hardly resist an opportunity to add some flair. You know what? I’m gonna make a super fun version of these and call them Party Balls… I think some edible glitter is in order!

Bonus: Your kids can throw these together themselves and create their own combination. I’m always looking for screen free activities, and cooking seems to be a go-to for us. Take your kids to the store and let them pick out their own ingredient combos. They’ll pick a cereal, a type of spread (like peanut butter or chocolate), and sprinkles. Then whatever else they think might be good. It’s a creative activity that’s also a life skill. Learning how to combine flavors is something my Mom taught me very young, and I’m beyond grateful for that. It inspired a love of creating in me from a very young age, so I’ve continued that with my children. It also builds confidence in their ability, which is an entirely other topic we should go deeper into here on the blog sometime.

Alright, these are super simple! You basically just throw it all together, stir, refrigerate, then roll into balls. You can store these in the freezer for 2-3 months, or the fridge for about a week. I’d make sure they’re good and separated before placing them in the freezer in a ziploc bag or plastic container.

Ingredients
  

  • 3 cups Quick Oats
  • 1 cup Honey
  • 1 cup Peanut Butter
  • 1/2 cup Milk Chocolate Chips (or whichever kind you like)
  • 1 cup Rice Krispies
  • 2 tbsp Sprinkles (optional)

Instructions
 

  • Throw it all in a bowl and mix
  • Cover and let set for 2 hours
  • Roll into balls

Notes

Depending on which cereal you use, you may need more of your binding agents (honey, peanut butter etc..).
