Y’all know how much I love butter, and pasta, and all the extra decadent foods. I mean, have you tried The Best Baked Macaroni and Cheese Ever? Y’all also know I’ve been doing 75 Hard and am sticking to a low calorie diet, so I’ve gotten creative to strike a balance. I’m not the type of girl who can do chicken breast and broccoli every day.
Before I started 75 Hard I overthought the heck out of meal planning to lose weight. I’d think about it so much that it all felt too overwhelming, and I’d quit before I started. Now that I’ve been eating low calorie, and watching my macros for a couple of months, I’ve realized I’m a learn as you go person. Maybe you are too? If you are, stop it 🙂 Fixed ya right up? Good.
I’ve been putting together low calorie versions of some of my favorite foods and creating the most simple, basic meals out of them. This Low Calorie Lemon Parmesan Gnocchi dish is one of the simplest, and so good. If you like gnocchi, of course.

This Italian place by our house in Maryland made the most amazing Gnocchi al Gorgonzola with filet mignon tips. That may be my next low calorie recipe attempt! It’s a super versatile pasta that even the kids love. If you’ve never had gnocchi before it’s like little potato pillow pasta. The texture reminds me of the cheesy bread rolls at Brazilian steakhouses. So. Good.
Low Calorie Lemon Parmesan Gnocchi
Ingredients
- 1 cup Gnocchi
- 1 wedge Fresh Lemon
- 1 tbsp Fresh Parmesan
Instructions
- Cook your gnocchi according to package instructions. Make sure you salt the water well. They float to the top super quickly, so keep an eye on 'em. Drain and put in a bowl.
- Squeeze your lemon wedge over the gnocchi.
- Sprinkle parmesan on top, toss together.
- Enjoy!
